It all started with a biscuit and a dream…

Well, really it all started with a friendship. In 2008, Brian Batch came to work as a barista at Thunderbird, a coffee shop owned by Ryan McElroy. The two became fast friends and built the coffee business together. Fast forward 8 years, they were looking for a new challenge. Inspired by nearly a decade of traveling together and a friendship they struck up with a mysterious Master Biscuit Whisperer, they started working on the idea that became Bird Bird Biscuit. Believing that the only way to build something great is to do the work, they labored for 2 years perfecting each recipe on the menu. Hundreds of batches to get to the best possible experience for their guests. In June 2018, they finally opened the doors to Bird Bird Biscuit, which were nearly blown off by the demand from guests hungering for great chicken and biscuits. They’ve spent every day since trying to make Bird Bird Biscuit just a little bit better, bite by bite. The journey continues to this day.
